Moonlighting in another band is pretty common in the world of music. Usually it's so the said artist can write, record and release music in a different genre from what they normally do, sometimes it's a collaboration with other artists ('supergroup') or just something done for fun.
Here are some of the side projects of bands/artists I can think of:

One of the coolest side projects ever:

Golden Smog

Golden Smog has been active since 1989, and has consisted of the following members:

Kraig Johnson (Run Westy Run)
Dan Murphy (Soul Asylum)
Gary Louris (Jayhawks)
Marc Perlman (Jayhawks)
Chris Mars (The Replacements)
Noah Levy (Honeydogs)
Jeff Tweedy (Wilco)
Jody Stephens (Big Star)

They've released four studio albums and an EP of covers.

The ones with Tweedy are the most interesting...Weird Tales is good, and Down By The Old Mainstream.

You want to hear a really, really UNEXPECTED side project (in the edges of musical experimentation)?
Check out Apparajik.
The band is a supergroup that consists of bassist Guy Berryman (Coldplay), guitarist/keyboardist Magne Furuholmen (A-ha), singer/guitarist Jonas Bjerre (Mew) and producer Martin Terefe.
I guarantee it is something that will catch you off guard

I don't know about it being in the edges of musical experimentation. To me it sounds a lot like Mew, just with a bit different production and some more "dancable beats", as the kids say today.

(more tracks than the ones I posted)
Your opinion is very much respected,
but I think Mew were "rockier" while this one is much more digital
I wouldn't say "dance", I would say "electronic"

Blur and Gorillaz' leader Damon Albarn also had an album by a band with no name called The Good, The Bad & The Queen that's more than worth checking out if you're a fan of Albarn. Danger Mouse produced the record too.
