Tortoise, Millions Now Living Will Never die
Labradford, Mi Media Naranja
anything by Godspeed! You Black Emperor, and A Silver Mt Zion
Gastr Del Sol, Camoufleur
The Sea & Cake, One Bedroom or Nassau
Liars, They Threw A Trench...
Slint, Spiderland
Bardo Pond, Dilate
Dakota Suite, This River Only Brings Poison
For Carnation, Promised Works

all these are great post-rock albums by my standards. You can add Mogwai, a litte bit more on the noisy side of the genre though. If you want to have a go at them, I'd recommend Young Team.

Post-rock is my second favorite genre of music and in my opinion no one is better than Slint but here are a few favorites of mine:
Rodan -Rusty
Explosions In The Sky - Those Who Tell the Truth Shall Die, Those Who Tell the Truth Shall Live Forever
Explosions In The Sky - The Earth Is Not a Cold Dead Place
Godspeed You! Black Emperor - Lift Your Skinny Fists Like Antennas to Heaven
Mogwai - Young Team
This Will Destroy You - This Will Destroy You

To me it's not post-rock, besides I couldn't recommend them, as I don't like them much : )

Sigur Ros is still considered post rock by many, so I think that's a fair answer.
A few more that haven't been mentioned

Talk Talk

Bark Psychosis
A Silver Mt. Zion
Stereolab
65daysofstatic
Fly Pan Am
Hash Jar Tempo
Pelican
Russian Circles
