I say good music.
Then I say Rock, Classical, and some Jazz.
You know...Beatles, Pink Floyd, Bob Dylan, Bach, Mozart, Beethoven....good music. I usually try to stress that I like anything...as long as it's good.
What do you mean by good?
You know...good. Like interesting, powerful, weird, unexplainable...I dunno.
Very hard question. I like to hand people my iPod and tell them to browse. Then I'll say something like, "I've really been getting into ______ lately," then tell them about my current obsessions.
I usually start by answering the question with another question. Usually, I say something like, "Do you mean now or all-time?" or "In terms of what genre(s)?
If they're interested in what I like of music today, I usually say, "Mostly stuff off the beaten path."
Yeah, it's a tough conversation starter, especially if you're dealing with someone who doesn't know that much about music (Sorry if that sounds elitist).
I also might say something broad and generic like, "I tend to like melodic rock especially the kind that emphasizes guitars and has an edge to it." When it comes to playing the band name game, I'll start off by mentioning one's people have heard of like The Beatles and R.E.M. who coincidentally are two of my all-time favorites, before mentioning more obscure favorites like Guided by Voices or Belle and Sebastian, or if we're going to get really contemporary, The Decemberists.
If I say "post-punk", people usually just stare at me - pause - then reply something like : " I don't like punk".
So I stick to recent albums I liked that people have probably heard of : "Merriweather Post Pavilion" (but still not totally mainstream), "The Eternel" (Sonic Youth might ring a bell), Arcade Fire etc.. And they might just understand I'm into indie stuff.

I usually list off bands that I like. The response mainly comes when I say The Cure and the question that follows is "Oh that Lovecats pop shit". Mind you, this is usually younger people that ask me.
