Oren Ambarachi and Brian Eno have both various 1,2 or 3 track albums. But my favourite at the moment is Harold Budd - Abandoned Cities.

Off the top of my head. Palace is the only semi-normal album there (being psych/proggish rock), everything else is postrock, drone, or experimental.
Shouts out to Rainbow in Curved Air btw, Terry Riley is so ahead of his time on the title track it's ridiculous. Give that man a medal.
