If I'm only counting studio album I'd have to go with Derek and the Dominos with Layla and Other Assorted Love Songs.

Don't know if Spinal Tap can be considered as having released only one album but if we consider so, they would have to be my favorite one album band.

Spinal Tap actually has three studio albums! Three real ones that is.. they have a lot of fictitious ones and bootlegs.
