I've wanted to do this for a while: listen to the work of a producer chronologically. I've begun by creating a list for Daniel Lanois' work. There's probably a few in there that he's not the sole producer on.
I might have a read of his biography again called, Soul Mining, while I listen through. It's turned up a few titles that I don't recall him mentioning when I read the book a few years back.

Briano Eno would be interesting as would Rick Rubin.

I count 28 on the Lanois list I haven't heard.
Brian Eno, Rick Rubin would be great.
Brendan O'Brien would be another.

discogs says eno has around 500 production credits, and rubin has like 900. that might take a while to get thru

But how many are for whole albums?
And I bet a lot of those are compilation albums... so, they don't count.
This Wiki article would put Eno's producer credited albums at about 110.

I think Steve Albini has both Eno and Rubin combined beat. Although a lot his credits are for engineering not strictly producing
Flood, would be an interesting guy to go through. Daniel Lanois is a great one.
DJ Premier would be the one I would want to do.
