Are singer-songwriter albums sort of what you're thinking? All that really come to mind are people like Missy Higgins and Delta Goodrem.

Thomas Newman has a lot of beautiful piano pieces. They'd all be in soundtracks though.

Can't really think of many full albums with piano as the focus. A lot of great tracks though.
