Artists that made one universally acclaimed album and basically no other albums with any critical recognition.

I realize you mention critical recognition, but Beach Boys have a lot more hugely popular music than just the stuff on Pet Sounds. I voted Violent Femmes. Their debut is an all time top 20 for me, and they just totally dropped off the map after that (even though Hallowed Ground is pretty good,) so they are sort of the perfect example of a one album wonder.

I voted DJ Shadow because out of the artists here that I've heard, there's the biggest quality gap between his best and the rest of his discography.

It's kind of confusing because the thread title says 'best,' but the question in your first post is about critical acclaim. Two different things. I second Tanner's comment about the Beach Boys, and I would add that Nas, Slowdive, and Neutral Milk Hotel also don't especially belong in this 'one-album wonder' category.

Beach Boys (SMiLE, Today!), Slowdive (Just For A Day) and DJ Shadow (Live! In Tune And On Time) are most certainly not one album wonders.

Well that's not true. I don't know what measurement you're using both God's Son and The Lost Tapes have a 9.0 user rating on metacritic (only .1 lower than Illmatic) and both of those, as well as Life is Good have an 81 critic score.
