Well, I think there's two major types of post-rock. There's the obvious ambient/relaxed post-rock, which there are many obvious bands to listen to- Sigur Ros, Talk Talk, Godspeed etc.- and then the hard, aggressive, math-rock bands.
If you want the long list by an expert, Tekin's post-rock list is great:
For relaxed, one of my favourite post-rock bands is Bark Psychosis, with my favourite from them being ///Codename: Dustsucker. 400 Winters is a great song.
For the aggressive, there's Gangs by And so I Watch You From Afar and One Time For All Time by 65daysofstatic.
Slint is probably halfway between these two, which combines the best of both worlds for me, meaning it's my favourite post-rock album.
Post rock is my favourite genre and my least favourite genre at the same time. Some amazing albums and some boring ass albums. Here are a few of the better ones IMO:
-Spirit of Eden - Talk Talk (It's proto-post-rock, but it still fits the bill IMO)
-Laughing Stock - Talk Talk
-Agaetis Byrjun - Sigur Ros
-F#A# - GY!BE
-Ocean Songs - Dirty Three
-Horse Stories - Dirty Three
-Vision Creation Newsun - Boredoms
-Under Fluorescent Lights - Storm & Stress
-Treny - Jacaszek
-Winter Hymn County Hymn Secret Hymn - Do Make Say Think
-Spiderland - Slint
-Seadrum/House Of Sun - Boredoms
-Very Soon, And In Pleasant Company - Shipping News
-Nocturnes - Boxhead Ensemble
-Emperor Tomato Ketchup - Stereolab
-More Deep Cuts - Thee More Shallows
-Invierno - Tan Frio El Verano
-() - Sigur Ros
-Lift Your Skinny Fists Like Antennas To Heaven - GY!BE
-Hospice - The Antlers
-Millions Now Living Will Never Die - Tortoise
-TNT - Tortoise
-Enjoy Eternal Bliss - Yndi Halda
-The Tired Sounds of the Stars Of The Lid - Stars Of The Lid
-Kinder - Kinder
-6 - Supersilent
-Dragging A Dead Deer Up A Hill - Grouper
taric and tekin each have custom charts dedicated to the genre, here's some of my personal favorites that might not be common in those charts or Defago's recs...
Ui - Sidelong
Jessamine - The Long Arm of Coincidence
Fontanelle - Fontanelle
Pram - Helium
Moonshake - Eva Luna
Laika - Sounds of the Satelites
Stereolab - Emperor Tomato Ketchup
To Rococo Rot - Veiculo
To Rococo Rot - The Amateur View
Ganger - Fore
Ganger - Hammock Style
Tarwater - 11/6 12/10
Kiln - Holo (does this even count?)
I'm still exploring the 'genre' myself, but its trashcan nature makes it really vast and amorphous. I'm not really the biggest fan of the post-hardcore or post-Lift-Yr-Skinny-Fists, crescendo-dependent sides of it, but if you like stuff like Tortoise, you should dig these.
I actually don't expect you to like most anything that's suggested though
