Pulp Fiction is unquestionably Tarantino's most important. Though it hasn't aged particularly well, the characters and dialogue are untouchable.

That being said, Inglourious Basterds is Tarantino's best. It's his most ambitious, his most technically impressive, most dynamic most entertaining, and most gratifying film. I think that the intersecting narratives all make for compelling stories, and that the film benefits from an eclectic and game ensemble. The direction is Tarantino's most confident and focused storytelling. Yes, a few moments are a little out of place–namely, the Hugo Stiglitz montage–but the film has a ton of memorable sequences, both intense and hilarious. All in all, Inglourious Basterds is the most accomplished culmination of very popular themes in Tarantino's work.
