And for an extra dose of sweetness: "Arthur's Theme (Best That You Can Do)" ?

Hello it's me is indeed great. It's not really an interpretation though because it's his song. I guess it's true that the genre you describe is just too broad. But everyone knows what you mean. I'm just going to stick to the definition of soft-rock being softer songs that are by artists who are basically rock artists. MOR is something kind of different. I really don't know how it's described, but I would describe it as music made by people who aren't really rock artists but just pop artists. Anyway, here are some of my favorites from the Golden Age of Soft Rock: The 70's.

Really? One of the world’s Top bad songs. But I might be prejudiced because there is an even worse German version. I am glad you mentioned At 17 though. A song (and artist) I love.
The ultimate soft rock song in my opinion is: Chicago - If you leave me now. A song that encapsulates all that is bad in soft rock. Topped maybe by Stevie Wonder’s crimes. I just called..., or Ebony and Ivory...
But this is off topic. So good ones. There are many. But somehow what comes to mind first is
Slade Everyday.

Did Slade do a soft rock song? Man I got to hear that. I can't imagine. I agree about the 2 Stevie Wonder's you named. Definitely his low points. But I think Chicago didn't get bad till the 80s really. All of their 70s hits were still pretty tuneful. And Let Your Love flow is a fantastically played song. It bounces along from start to finish. Super catchy with a great bass line, its a great record.

A lot in your list are a bit too folk for my taste. But some I liked :

Otherwise, sticking to rockers doing mid-tempo ballads, I’m thinking of :

Grateful Dead : Box of Rain
+ The Cars: Drive : but it's more a slow song, in the like of 10cc “I’m not in love”, than "classic" soft rock.
