So far...
Honestly not that many. I have a tendency to go to a Wikipedia page, look up some odd genre that mutated from the post punk or new wave scene and listen to one album by every band in the article. So, I have listened to one album by quite a few bands, but only a few bands have I actually listened to all of their music (or more than one album, honestly). But so far, I have listened to everything by
Styx (It was my favorite band from about 8 years old to about 16 or 17, so...)
The Police
Wall Of Voodoo
Snakefinger
Animals As Leaders
Primus
Talk Talk
Bauhaus
Credence Clearwater Revival
Dire Straits
The Fixx

10 bands, that's actually a lot, depending on the amount of albums they've made. I usually don't have desire to listen to a band's full discography if I'm not into their most acclaimed stuff.

Im gonna venture out and say, almost every artist I listen to. But its really not fair because I listen to primarily modern artists, so all the bands/artists i listen to only have released a handful of albums. But in the spirit of lists, heres a list of some of the most enjoyable and consistent discographies ive ever endeavored.

The only complete ones I can think of are:
XTC (12 albums, plus all the Duke of Stratosphere stuff)
Led zeppelin (8 albums, coda doesn't count)
Free (6 albums)
Ben folds Five (4 albums)
and Fred (4 albums)
Although I've made a substantial dent in the discographies of:
Elvis Costello (16/30)
The Beatles (10/12)
and Guided by Voices (16/23)
