Metallica covering Am I Evil? is pretty awesome, even improving on the already great original. Their other Diamond Head covers are also awesome. In fact, half of Garage, Inc. (covers album) is brilliant!

Patti Smith has some pretty good covers, Gloria and My Generation come to mind. I liked the recent Three Days Grace cove of The Chain too.

This was originally a Bob Dylan demo, though it was never officially released. So I don't know if it technically qualifies as a cover, but it's a great song nonetheless. Also Darius Rucker released a cover of it this year, but I prefer this version.
