David Wise and Eveline Fischer's work on all three Donkey Kong Country video game scores are just phenomenal. Olivier Derivière, and Normand Corbeil are also really amazing orchestral composers who work in the field and then you have Michiru Yamane's Symphony of the Night which is one of the best video game scores out there.
With video games (which I don't play very often any more) I don't pay as much attention to the soundtrack, but the Super Mario Galaxy soundtrack makes me feel like I walking through a world of pure euphoria.
