Three of my five favourites have already been mentioned (King Tubby's Meet Rockers Uptown, Africa Dub Almighty volume 3, African Anthem), but I'll throw forward the other two:

Scientist Rids The World Of The Evil Cu... Scientist

Also, despite it not technically being dub in the strictest sense, one of my favourite albums of 2014 is worth a listen for anybody interested in the genre, as it's a collaboration between two giants of the dub techno scene (and the best album-length project I've heard from either, if I'm honest):
