I too, have just began to dig deeper into metal. It's been one hell of a ride.
It may make sense to stick to one subgenre at a time to see what sticks. Some metalheads will claim that these subgenres sound nothing alike.. But it will probably take a little while before you get to that stage. For instance Black Metal vs Death Metal. This took a while for me to distinguish, but I can now see the differences (however I'd say there are more similarities than some people say).
I've been a prog head for some time and therefore tend to gravitate to the proggier groups such as Opeth or Between The Buried And Me. These two groups have blended progressive rock with death metal in a beautiful way, however Opeth have recently stopped including death growls in their newest batch of albums (although they are still wonderful without them).
If you want some energetic, high paced, in your face type music, I'd recommend checking out some groups in the Mathcore scene. This is a fusion of mathrock and hardcore music, and can be a blast. I'd recommend checking out Converge, The Dillinger Escape Plan, and Rolo Tomassi.
On the opposite end of the spectrum, if you want to get into the slowest metal you can find there are many great subgenres within Doom Metal/Stoner Metal worth checking out. Some of my favourites include Weedeater, Bell Witch, and Yob.
As far as Black Metal goes, I've recently discovered some crazy experimental, avant-garde albums by Imperial Triumphant, who have created an epic string of albums of a sort of deathened-blackmetal (black metal with the lower end growls of death metal). If looking for a group that gravitates more towards a pure black metal sound Watain is a good choice.
Most of the groups I've mentioned above are relatively new and are still releasing music to this day. If you're looking for more of a beginners guide in the sense of the originators of the genre, this isn't your list (maybe start with Master Of Reality by Black Sabbath [early doom] or Leprosy by Death [early deathmetal]). But there are plenty of groundbreaking metal releases happening right now and you'd hate to miss out on them because you were so worried about groups in the past who likely aren't touring anymore. This isn't to say not to check out the pioneers, but I just want you to be aware of some of the talented groups who you could watch grow, and maybe even go check out a great show!

Besides the usual suspects (Iron Maiden, Metallica, Black Sabbath, etc) I think the following albums were the ones that really helped me get into metal:
- Crack the Skye by Mastodon
- Oceanic by Isis
- Akuma no Uta by Boris
And of course, the big one:
The Mantle by Agalloch
I also have a chart called Not Enough Metal in the Charts that includes my favorites. There's a lot of extreme stuff there, so if you don't care for shrieked vocals or black metal (yet) you may want to wait to try those. But I have subgenres listed so you can get an idea of what to expect from each one.
